Tuve varios trabajos antes de decidirme por estudiar Cocina, pero los fogones me llamaban y decid\u00ed formarme para ello. Una vez que comenc\u00e9 mi formaci\u00f3n gastron\u00f3mica la motivaci\u00f3n y la ilusi\u00f3n fueron creciendo a\u00fan m\u00e1s. Era mi destino.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Desde entonces he ido aprendiendo en cada lugar en el que he estado, en cada puesto, en cada restaurante; desde mis comienzos b\u00e1sicos en un restaurante de C\u00e1ceres hasta llegar a ser Jefe de Cocina en CoolRooms Atocha. Hay una evoluci\u00f3n hacia una cocina de vanguardia, pero cada vez m\u00e1s desenfadada, vers\u00e1til, y divertida. Regresamos a las recetas de la abuela, al producto de proximidad y sobre todo, a un concepto m\u00e1s f\u00e1cil, a una forma de comer que te permita probar m\u00e1s cosas, en peque\u00f1as porciones, y diferentes sensaciones.<\/span><\/p>\n<p><em><strong>\u00bfQu\u00e9 3 propuestas de tapas te inspiran en Madrid? <\/strong><\/em><\/p>\n<ul>\n<li><strong><span style=\"font-weight: 400;\"><strong>Las<\/strong> <strong>rabas de calamar<\/strong><\/span><span style=\"font-weight: 400;\">, son muy preciadas por el madrile\u00f1o de toda la vida, y los turistas en la ciudad. <\/span><\/strong><\/li>\n<li><strong>Las<\/strong> <strong>patatas Bravas<\/strong>, son el s\u00edmbolo de la cultura de la ca\u00f1a y el chato de la capital.<\/li>\n<li><strong>Los c<\/strong><strong>allos madrile\u00f1os<\/strong>, una tapa que a pesar de ser presumiblemente de invierno, bien trabajada, con especias a medida y un buen garbanzo, es un manjar para todo el
